Today was my first day back in the classroom teaching students since June and I am so tired. It’s this way every fall, there’s no way to prepare for the shift in the amount of physical, emotional and mental labor required to go back to work. In a week or so, I’ll be back in the swing of things, but at the moment I’m just thinking of going to bed.
BUT I’ve planned a pretty great menu for the week, so at least we’ll eat!

Slow Cooker Corn & Red Pepper Chowder (Oh My Veggies)
Broccoli Parmesan Fritters (Smitten Kitchn) with sauteed potatoes
Stir fry with peppers, edamame, cabbage and broccoli
leftover Slab Galette with Swiss Chard and Gruyère
Baked Eggplant (updated recipe coming soon?), sides TBD
lunch: jambalaya (Serious Eats), yogurt, apples
