My monthly attempts to get these challenges up sooner (like, the first week of the month, perhaps?) was once again unsuccessful this month. The first week of school totally wiped me out. Why I am surprised each September when I discover that transitioning back to supervising 12-year-olds all day is exhausting? But, I’m finding my rhythm and getting back into the routine. Also, I have awesome students this year.
Another thing I’m always struggling with is figuring out what to eat before work. I know I’m not alone in that! Periodically, I make an effort to make something over the weekend to eat throughout the week. This month’s challenge is exactly one of those things.

Relishments Bakes – September
This month, we’re making muffins!

If you haven’t jumped into Relishments Bakes yet, this is your month. Muffins are really simple, there’s something for everyone and — more often than not — you can make them in a single bowl and a single muffin pan. Plus, you’ll have breakfast for a week or more AND you can freeze them!
I’m excited to try these:
- Blueberry Banana Crumble Muffins — A Dash of Evans (recommended by Kelly Nigl)
- Donut Muffins — King Arthur Flour
- Vegan Carrot and Zucchini Harvest Muffins – Joy the Baker
- Gluten-Free Apple and Oat Muffins – Bon Appetit
As always, the Pinterest board for this month has lots of ideas too!
Don’t forget to use #RelishmentsBakes on your social media posts and tag @relishments so I can see your muffin results!
