This is the first weekend in a long time that I haven’t had a million things going on. It feels so good. After reading blogs, writing and taking care of this week’s grocery shopping, I wasn’t sure I’d ever find the motivation to get off the couch. But I kept thinking about how annoyed I’d be with myself tomorrow if I didn’t make the most of my free time so I eventually found my way to the kitchen and made a batch of pickled dilly carrots. The carrots have been on my to do list for a long time and we picked up an extra few items worth at our last CSA pick up.
I made these as fridge pickles so they were much faster, easier and less stressful than conventional pickles sometimes are. I didn’t worry about whether the jars were perfectly sterile, I didn’t have to wait for the huge canning pot to boil. Makes me wonder why I don’t make fridge pickles more often. I can’t wait until they’re ready to eat in a couple days! And now I can say that I actually have something to show for my lazy Saturday afternoon, without feeling like I spent all of it in the kitchen.
